Your IP address can be used to determine personal information about you such as your location. If you want to hide your IP address from various third-party trackers via Safari, this feature in Settings can do that for you.
How to hide your IP address from trackers
Tap Settings
Scroll down and tap Safari
In the Safari menu, scroll down to Privacy & Security
Tap Hide IP Address
Select From Trackers
