There are potentially several reasons you might want to hide your iPhone's number before placing a call, like calling a company that you would prefer not log your number to add to a solicitation list. Regardless of the reason, temporally blocking caller ID on iPhone is quite simple. Go to Settings > Phone > Show My Caller ID, then toggle off Show My Caller ID. Note: this feature does not work on Verizon-based phones.
